Around 2 years ago, I became obsessed with “healthy things that don’t taste like they’re healthy”. I started looking on Pinterest for recipes for healthy ice cream and breakfast cookies and stumbled upon this recipe: Chia Chocolate Chip Oatmeal Breakfast Cookies. This recipe is what inspired my little creation here, but I put my own spin on it. The cookies I made are bite-size, a little crumbly and soft. They are oil-free, refined-sugar free and contain Omega-3s from the walnuts and chia seeds. These cookies are perfect for breakfast, a snack or dessert and they are super simple to make.
Ingredients:
- 1/2 cup sliced almonds
- 1/2 cup pecan chips
- 1/2 cup walnut pieces
- 1/2 cup peanut butter
- 1 egg
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 tablespoons honey
- 1/2 cup chocolate chips
- 2 tablespoons chia seeds
- 1/2 cup rolled oats
Instructions:
- Preheat oven to 350 degrees F. Spread walnuts, almonds and pecans out on a cookie sheet. Toast the nuts in the oven for 8-10 minutes. You’re going to want to toss the nuts around halfway through. Transfer the nuts into the food processor and pulse until the blend is like peanut butter consistency.
- Transfer the nut blend into a larger bowl and add the peanut butter, egg, salt, baking soda, cinnamon, vanilla and honey. Mix until totally combined.
- Fold in the chocolate chips, chia seeds and oats.
- Form the batter into small balls and place on a greased cookie sheet. Flatten slightly (the cookies don’t expand in the oven).
- Bake for 7-9 minutes or until edges are slightly brown. Let cookies sit for a few minutes to cool. Store in air-tight container to keep fresh.
Hope you enjoy these! I just had two as a pre-workout breakfast. Comment below if you’re going to try out this recipe and thanks for reading!
