Good morning! Today I wanted to share with you a super easy breakfast for those days when you have very little time in the morning to cook something. Now that I’m back in school, mornings have been super busy, so I like to prep for my day the night before. I’ve seen a bunch of recipes for overnight oats, but I think this is the most simple. The end result may look a little gross, but I promise if you like peanut butter and oatmeal, you will love this quick and easy recipe!
What you need:
(These are all estimated measurements. Use as much as you want!)
- 2- 2 1/2 cups Almond Milk
- 2- 2 1/2 cups Dry Oats
- 2 Dollops of Peanut Butter
- 2 tablespoons of Honey
- 1/2 cup Chocolate Chips
- 1/4 cup Chia Seeds
8-12 hours later
Directions:
- Fill a mason jar half way with dry oats. Completely cover the oats with your choice of milk (I used vanilla almond milk).
- Drop peanut butter and honey in the mason jar. Mix thoroughly with a spoon. Add chia seeds and chocolate chips, then stir all of the ingredients together.
- Close the mason jar tightly and place in the refrigerator. Leave overnight.
- Take out of the refrigerator the next morning. Add fresh fruit and enjoy!
