Ahh the sweet, sweet smell of independence. And having to fend for myself. During my first week of officially sleeping and working in my new apartment, I decided to document everything I cooked for myself. I’m definitely not the greatest cook and I’m lazy at heart when it comes to food, but I was actually pretty healthy this week. If you’re a lazy cook like I am, check out some of these super easy recipes that did not cost me a lot of money to make. Each recipe probably took 20 minutes at most and I was proud of myself for being creative with what I had in the house. I didn’t go out to eat during the week (with the exception of the ice cream you see above) so let’s celebrate that! Check out the easy meals I made for myself during the first week I spent in my apartment.
Monday:
Breakfast: sauteed kale and 2 fried eggs with EBTB seasoning, cold brew with oat milk.
Lunch: 2 turkey and veggie wraps (bell pepper, mayo, turkey slice, avocado, cucumber on low carb tortillas)
Dinner: kale salad with peaches, goat cheese, bell pepper chunks, avocado, blueberries and balsamic vinaigrette dressing. (did not take a picture of it but she was cute)
Tuesday:
Late Breakfast: honey sriracha avocado toast (mashed avocado, EBTB seasoning, sriracha, honey and 2 eggs on whole wheat bread), cold brew with oat milk
Snack/Lunch: one turkey veggie wrap- tortilla, garlic mayo, turkey slice, red bell pepper, mini cucumber
Dinner: quinoa power bowl- roasted sweet potatoes, sautéed kale, red pepper, onion, black beans and lime juice
Wednesday:
Breakfast: cold brew with oat milk (I know, I know… not a real meal)
Lunch: quinoa bowl with sautéed kale and onions, black beans, roasted sweet potatos, Sriacha and honey
Dinner: tacos with ground turkey, lettuce, cheese, pineapple salsa (Thanks Shaner!) and margs
Dessert: Fells Point Creamery with the Al(l)isons
Thursday:
Breakfast: avocado toast (mashed avocado, EBTB seasoning, sriracha, honey and an egg on whole wheat bread) and vanilla almond butter, chia seeds and blueberries on toast
Lunch: taco salad- quinoa, left over ground turkey, lettuce, black beans, and pineapple salsa
Dinner: a bowl of Fruit Loops (lazy, I know)
Friday:
Breakfast: french toast rolls stuffed with Nutella and a cup of blueberries
Lunch: avocado toast- whole wheat bread with mashed avocado, lime juice, onion, EBTB seasoning and 2 eggs
Dinner: &pizza (the Maverick!)
The Weekend:
I intended to make this a blog post of 7 days of meals but confession: I did not document my meals over the weekend because I probably drank more than I ate. No regrets though! I had a wine night with the girls on Friday, drinks at the Elk Room on Saturday and brunch and the Sandlot on Sunday. Very enjoyable but did not make for good content for this blog. So I’ll wrap up this post here.
