Woo-hoo single living! I have been enjoying my solo life in my own apartment. I’m a very lazy cook but when I find an easy recipe I like, I obsess over it and make it over and over again. Which is why I am presenting you with this gorgeous looking salad. It’s surprisingly filling and very easy to throw together.
Ingredients:
- spinach
- cucumber
- red bell pepper
- cherry tomatoes
- basil
- blueberries
- peach slices
- buratta cheese
- EBTB seasoning
- balsamic dressing
Directions:
- Wash spinach leaves. Put them in a large bowl.
- Chop up some cucumber, red bell pepper and cherry tomatoes (you won’t need the entirety of each vegetable if you’re just eating for one).
- Rip up some basil leaves and toss it in the bowl with some washed blueberries.
- Slice up a peach and toss the pieces into the bowl (usually half a peach will do).
- Place burrata in the bowl on top of the fruits and veggies.
- Sprinkle some EBTB seasoning overtop.
- Drizzle some balsamic dressing over everything.
- Break open the burrata with a fork and knife.
- Shake up salad until fully mixed.
