I’ve been enjoying trying out different recipes while I’ve been living on my own. Remember when that Tomato Feta Pasta was really popular on Tiktok? Well here is the autumn version of that. I also found this recipe on Tiktok (here’s the link) but decided to do my own little spin on it. This pasta is so easy to make and perfect for those chilly fall days. I also bought all of these ingredients from Trader Joes!
Ingredients:
- Fall Zucchette Pasta
- A block of Feta Cheese
- Butternut Squash Straws
- Olive Oil
- Sriracha
- Honey
- Sage
- Garlic Powder
- Salt and Pepper
Directions:
- Throw your butternut squash straws in a baking pan with salt and olive oil. Place your feta block in the middle of the pan surrounded by the squash, pour on more olive oil and season with garlic powder, salt and pepper. (You can use whatever spices you like).
- Bake at 400 degrees for 30 minutes. Then turn the heat up to 450 degrees and cook for 10 more minutes.
- While that bakes, cook your Zucchette pasta. (Save some of the pasta water)
- When the feta and squash are done in the oven, take out the pan and add your sage leaves. Stir it all together.
- Add your pasta and around a 3/4 cup of pasta water to the pan. Stir it all together.
- Drizzle your honey and sriracha on top and mix one last time.
