I’d like to start a new series here on the blog of quick and fast recipes that I love to cook in my apartment for myself. I am not the best cook, but I have been trying eat at home as often as I can to be healthy and save money. Honestly, I get most of the ideas for cooking from Instagram and Tiktok. And you will probably recognize the general idea for this recipe from Tiktok too. I love this meal because it only takes 20 minutes to make and has some veggies in it (I always try to have some sort of greens in every meal).
Ingredients:
- Salmon Filet
- Rice (sometimes I use Cauliflower Rice)
- Green Onions
- Cucumber Slices
- Mayo
- Sriracha
- Soy Sauce
- Honey
Directions:
- I usually buy a pack of frozen salmon filets from Trader Joe’s or Costco. I’ll spend a few hours letting the salmon thaw so its no longer frozen. Then I’ll remove any skin and cut it into cubes. I usually season my salmon with avocado oil, Trader Joe’s Citrus Garlic Mix and Chile Lime Seasoning. Then I put it in my airfryer at 400 degrees for 15 mins (until fully cooked and brown at the top).
- Cook whatever rice you prefer. You’ll need a cup of it per serving so I usually cook it then store the rest in the fridge.
- Chop up a few cucumber slices into quarters and chop up one green onion.
- For the sauce, I mix 2 tbsp of mayo, 1 tbsp of Sriracha, 1 tbsp of soy sauce and 1 tbsp of honey in a small bowl. Honestly, those measurements are a complete guess. I just eyeball it.
- In a single serving size bowl, put the rice at the bottom (I will also put EBTB seasoning on the rice for more flavor, but I feel like I will get judged for that). Then I throw in the cucumbers and green onions. Add the salmon when done cooking and then throw the sauce on top.
- Mix all together and enjoy!
This is totally a knock off version of the infamous Emily Mariko salmon recipe, but this is what works for me! It only takes about 20 minutes to do and is so good! This is definitely my hyper fixation food for the time being, so I wanted to share it. It’s not super fancy, but it is delicious to me. If you do try it, I hope you enjoy!
