Let’s keep going with my series of ‘solo meals I cook in my apartment’! I guess I should just call this a ‘dump’ soup because I usually make this when I have veggies, herbs or a cheese spread in my fridge that I don’t want to go bad. This is also the easiest meal to make if you work from home! I will literally roast the vegetables while I’m in a meeting and then blend it all up afterwards. I definitely got the inspiration for this soup from a Tiktok creator, but I unfortunately do not remember who.
Ingredients: (what I normally use, but you can literally use whatever!)
- cherry tomatos
- 1/2 an onion
- head of garlic
- 1/3 of a red bell pepper
- some basil leaves
- veggie broth (sometimes chicken bone broth)
- Boursin Garlic Cheese Spread
Directions:
- Chop up onion and bell pepper. Season tomatoes, pepper and onion in a baking pan with olive oil and desired seasonings (I usually do garlic powder, onion powder and paprika). Chop off the top of the garlic head and season the top with Trader Joe’s Green Goddess Seasoning and olive oil. Wrap in tin foil and place in the pan with the other veggies.
- Bake in the oven at 350 degrees for roughly 20-40 mins (I never keep time, I just constantly check to see if the olive oil is simmering. Oven temps and times will vary!)
- When done baking, carefully put the veggies in your food processor (while still hot). Open up the tin foil and carefully squeeze the roasted garlic into the food processor as well.
- Throw in 1 or 2 tbsp of Boursin Cheese. I tend to just throw in whatever is left, but you definitely don’t want a whole block! This is just for added creaminess.
- Add the veggie broth. I usually eyeball the amount until it has coated all the veggies- usually around a cup or two. You can add as much or as less as you want, it will depend on how liquid-y you want your soup! Then throw in the basil leaves.
- Blend in your food processor, then enjoy!
