I love a 4 step Trader Joe meal! Truth be told, I am pretty lazy with my cooking, but I do cook for myself the majority of the time. I am very easily influenced by Pinterest and videos I see online, which is where I got the inspiration for this recipe. I am not very original, but this is a wonderful formula to go off of if you need a last minute dinner that warms the soul and has some protein and greens included.
Ingredients:
- Tomato & Roasted Red Pepper Soup from Trader Joe’s
- Frozen Sweet Potato Gnocchi with Butter & Sage from Trader Joe’s
- A Bag of Baby Spinach
- A Pack of Sausage
Instructions:
- Cook the sausage in a pan until they are browned on all sides. Then cut them up into bite-size pieces.
- Add to a large pot. Set the pot to medium heat.
- Add the gnocchi on top of the sausage.
- Pour in the soup on top and mix all together. Put a lid on the top and let it cook for 5-10 mins until it starts to boil slightly. Then turn the heat to simmer.
- Add in as much spinach as you like. I like to add at least 3/4 of the bag, since it condenses a lot.
- Keep on simmer until the spinach is cooked and softened.
- Enjoy! But be careful, because it will be hot.
