Something I’ve been really focused on the past few months is healthy breakfasts. I have been getting up at 5:30am most mornings to do Orange Theory and I usually do a fasted work out (meaning that I don’t eat anything before), so when I get home I am starving. Somedays I can spend a good chunk of my morning cooking and other days I only have time to heat something up and then rush to work. So in the latter case, meal-prepping is key. One of my best friends, Kalen, showed me a few really great meal prep breakfasts that are both healthy and delicious! (Here is her fitness website!) Breakfast is 100% my favorite meal of the day (well technically brunch is, but you can’t drink mimosas at 12pm every morning) so starting the day off with a good meal is super important to me.

Something I didn’t know I loved until a few month ago: spicy margaritas! It’s so weird to drink something that is both cool and hot at the same time. I first had one while I was traveling in Cleveland a few months ago but now it’s my go-to drink when I get margs with the girls (and I’ve always loved tequila). It’s officially April and I’m 4 weeks out from my second half marathon. I think I’m going to do another month of “no fun” just to make sure I’m fueling my body for those 13.1 miles and all the training leading up to it. This past weekend I ran a very slow 8 miles outside because it was beautiful out. I wish I had done a little better on speed, but my training isn’t perfect and I still have time to improve! Lately I’ve been focusing on making sure I am eating properly for training, because last year I definitely was not. I would literally eat like a salad 6 hours before a 10 mile run and then I would wonder “Why am I so tired?” or “Why couldn’t I run as far?” Ugh. I definitely learned my lesson. Diet is one of the most important aspects of training! My biggest thing: Carbs are your friends!

I had the rude awakening the other day that it is extremely cold outside, and apparently the cold is here to stay. So of course I texted my dad about this (because whenever I’m upset about anything, I text my dad) and he suggested that this week would be a great time to make some taco soup. Now I realize that not everyone knows what taco soup is and truth be told, the best way I can describe it is a thinner version of chili. Now I want to emphasize that these pictures do not do this soup justice. Taco soup is one of my all time favorite dishes and it is so easy and cheap to make! Trust me when I say that as the days get chillier, you’re going to want to come home to this soup.

Now that I’m back in school, mornings have been super busy, so I like to prep for my day the night before. I’ve seen a bunch of recipes for overnight oats, but I think this is the most simple. Healthy Chocolate Chip Cookies
Around 2 years ago, I became obsessed with “healthy things that don’t taste like they’re healthy”. I started looking on Pinterest for recipes for healthy ice cream and breakfast cookies and stumbled upon this recipe: Chia Chocolate Chip Oatmeal Breakfast Cookies. This recipe is what inspired my little creation here, but I put my own spin on it. The cookies I made are bite-size, a little crumbly and soft. They are oil-free, refined-sugar free and contain Omega-3s from the walnuts and chia seeds. These cookies are perfect for breakfast, a snack or dessert and they are super simple to make.

Everyone loves tacos! And I think I discovered the best tacos on the Eastern Shore! Last month, my best friend, Allison, and I drove an hour away from school (during finals week-yikes-) just to check out Pico Taqueria in Chincoteague Island, VA. And let me tell you, the drive was totally worth it.
