I’ve been thinking a lot lately about how I look in photos vs how I look in the mirror. I know this is not a groundbreaking idea. In this day and age, social media and documenting everything is very mainstream. I like to joke with my friend whenever we take a photo and I don’t feel the need to look at it afterwards that it’s because “I have an entire blog dedicated to how great I look”. As it turns out, if you say “Men are trash” 3 times fast with the lights off in your bathroom, I will magically appear at your nearest airport! No joke! That is actually why I took a very random and impromptu trip to see one of my best friends, Kalen, in her parents’ lake house in Guntersville, AL. Last time I was in Alabama was in 2017 for the Ole Miss game and this was my first time seeing Kalen since her van accident. While this trip was super fun and very relaxing, it was so wonderful to see my friend safe and sound. So enjoy this photo dump!

Let’s keep going with my series of ‘solo meals I cook in my apartment’! I guess I should just call this a ‘dump’ soup because I usually make this when I have veggies, herbs or a cheese spread in my fridge that I don’t want to go bad. This is also the easiest meal to make if you work from home! I will literally roast the vegetables while I’m in a meeting and then blend it all up afterwards. I definitely got the inspiration for this soup from a Tiktok creator, but I unfortunately do not remember who.

Don’t ask me why, but I have been obsessing over neutral, casual dresses I can wear in both spring and summer. And yes, blue does count as a neutral. If you couldn’t tell from the image above, midi dresses are all I can think about and if they are tiered… *chefs kiss*. I love a versatile dress that can be dressed up or down. Any of these dresses would look great with heels or sneakers, which makes them the perfect dresses for spring and summer.

Like many of us, my body has changed in the last 2 years since the Panda Express started. And I don’t think I realized it until February. Given- I was isolating and bunkering down in my apartment for most of winter due to all the COVID going around. As I get older, I start to accept that my body needs consistent movement and exercise in order to function at it’s prime. So when I was sick and not moving my body as frequently as I used to, its no wonder my body changed.

I love this meal because it only takes 20 minutes to make and has some veggies in it (I always try to have some sort of greens in every meal).
